The unifying theme is food, specifically how the inhabitants of this Po Valley area obtained and produced food before the discovery of America had any influence. The area is the center of the Po Valley between the provinces of Milan, Cremona, Lodi, Brescia, Bergamo, and Mantua. The background includes social roles, hardships, famines, and plagues, along with the wars that seasoned a century that was both agitated and normal for that time.
The research was conducted by analyzing archival documents from the State Archives of Milan, Cremona, and Mantua, among others. It is therefore an educational path that tends to propose a method of understanding food first and then cooking.
