The Quinto Quarto Carnival

The Quinto Quarto Carnival essentially refers to the use of the poor parts of the pig in traditional Po Valley cuisine. By poor parts is meant the offal, liver, heart, feet, rind, tongue, kidneys, etc., everything that, in the necessity of the rural world, had a value almost comparable to the noblest and most valuable parts of the animal.

The event takes place at the end of the carnival: in respect of culinary traditions that are still surprisingly alive, amidst sweets and freshly made polenta, music and songs, stories and masks, the pig lives its moment of glory and respect.
